Banana Cheesecake

  • ½ a pack of digestive biscuits
  • 250g Butter
  • 150ml Whipping Cream
  • 100g Mascarpone Cheese
  • 150g Icing Sugar
  • 1 thinly sliced banana




  1. Break up all the biscuits and place into a bowl
  2. Slowly melt the butter in a pan on a low heat
  3. Add the butter and biscuits together
  4. Place base mixture into a non-stick Spring form cake tin and squash
  5. Put in fridge to set


  1. Whip up cream in a bowl using a electric whisk
  2. Add the mascarpone slowly while mixing to the cream
  3. Sieve in the icing sugar and mix with a wooden spoon to ensure the sugar has been incorporated to the mixture
  4. Add thinly sliced banana
  5. Take the base out the fridge, and add the filling on top of the base
  6. Place it into the fridge for 30 minutes to allow the mixture to cool and set.

You could add different fruits to flavour this cheese cake instead of the banana
