Toad In The Hole

  • 4-8 Pork Sausages (Depending on size of the sausages)
  • 110g (4oz) Plain White Flour
  • 300ml (½ pint) Milk
  • 2 Small Eggs
  • ½ tsp Salt


  1. Preheat the oven to 230°C; 450°F: Gas Mark 8
  2. Place the flour into a bowl, then make a well in the centre and break in the eggs.
  3. Mix in half the milk using a wooden spoon and work the mixture until smooth. Then add the remaining milk.
  4. Whisk the mixture until all of the flour egg and milk is fully combined.
  5. Put mixture to one side
  6. Fry the sausages in a pan until lightly coloured.
  7. Remove the excess fat from the sausages in to a small roasting tin adding a little oil, if needed, to bring the amount of fat up to about 4 tbsp.
  8. Heat the fat until smoking hot by putting the dish into the oven
  9. Pour in the batter you made earlier.
  10. Add the sausages and place back into the hot oven.
  11.  Bake for about 5-10 minutes at 230°C; 450°F: Gas Mark 8, then reduce the heat to 200°C; 400°F: Gas Mark 6 and bake for a further 20 to 30 minutes or until the batter around the sausages has risen and is a deep golden brown
  12. Serve immediately.

This dish goes very well with Onion gravy. To make; all you need is some beef stock with sliced onions added. Then allow the stock to reduce slightly. After which add some corn flour (that has been mixed with cold water to make a paste) and allow the sauce to thicken.
