Tomato Con Carne

  • 1 Onion (finely diced)
  • 1 Beef Oxo Cube
  • 1 Tin Chopped Tomatoes
  • 1 ½ mugs of basmati rice
  • 500g pork meat


  1. On a chopping board cut up the pork meat into bit size chunks, discarding any fat that may be on the meat
  2. Place the pork into a frying pan with a little oil and start to cook on a medium heat stirring occasionally to ensure that all of the meat is cooked
  3. Add your chopped onion and turn the heat up to high, to allow the rest of the pork and onion to cook
  4. Once the pork has coloured and the onion is turning a nice golden colour, turn down the heat and crumble in the oxo cube
  5. Stir in the oxo cube and allow to cook out for a few seconds
  6. Add the chopped tomatoes, simmer and allow to reduce (remembering to stir occasionally to prevent the bottom of the dish burning)
  7. Cook the rice in boiling water according to the pack (to make sure that the rice has been cooked it should be soft to the bit not hard)
  8. Once the pork dish has reduced (boil down the liquid slowly until it has almost all disappeared) serve on a plate with the rice and enjoy.

To add different flavours to this dish you could add some honey to the pork to give it a nice sweet glaze, or you could add some herbs and spices to give a gentle “kick” to the dish.
