Kentish Oast Cakes

Makes: 10 biscuits (approx.)

  • 450g Plain flour
  • ½ tsp Salt
  • 125g Castor Sugar
  • 1 tsp Baking powder
  • 100g Lard
  • 200g Currants
  • 1 tsp Lemon juice


  1. Sift all of the dry ingredients in to a bowl
  2. Rub in the Lard and stir in the currants
  3. Mix into a light dough with a little water mixed with the lemon juice
  4. Roll little pieces of the dough out and cut using a pastry cutter
  5. Fry the cakes until golden brown in a little hot oil
  6. Finish by rolling the cooked cakes in a little e sugar
  7. Enjoy whilst warm.

These biscuits go well with a cup of tea or coffee
