Mediterranean Bruschetta

Serves: 2 (as a starter)

Time: 20 mins


  • ½ Ciabatta
  • 4 medium tomatoes
  • 1 small clove of garlic
  • Olive oil
  • 1 teaspoon Balsamic vinegar
  • ½ a diced onion
  • Seasoning


  1. Cut ciabatta into 6 pieces
  2. Drizzle with olive oil
  3. Place under grill to toast
  4. Take out of grill
  5. Dice up onion and garlic
  6. Finely chop tomatoes and place in mixing bowl and add balsamic vinegar
  7. Add the diced onion and garlic and mix
  8. Place mixture onto ciabatta pieces using a small spoon and serve
  9. Enjoy!!


These goes well as a starter or a side dish. Try adding some Buffalo mozzarella and some freshly chopped basil and oregano to make theses taste irresistible!
