Olive and Feta Cheese Salad

Serves: 4 as a side dish

  • 200g Feta Cheese
  • 100g (1pkt)  Rocket leaves
  • ½  Cucumber
  • 340g Jar of Green Olives
  • 3 Spring Onions
  • 1  Orange Pepper
  • Balsamic Vinegar
  • Olive Oil


  1. Cut the feta cheese into equal squares roughly 1cm thick and place into a large salad bowl.
  2. Rinse the rocket under cold water and drain using a colander, add to the bowl.
  3. Cut the cucumber half width ways, and then slice the cucumber into strips length ways and place into the bowl.
  4. Drain the olives and add to the salad mixture.
  5. Cut the root off, and remove any brown leaves of the spring onions and slice from tip to root and add to bowl.
  6. Take the orange pepper and cut off the top.
  7. Remove the seeded area that is in the middle of the pepper.
  8. Cut the pepper into slices and add to the bowl.
  9. Mix the salad together.
  10. Drizzle with olive oil and balsamic vinegar and enjoy.

I recommend when buying olives try to purchase the jar that has olives in olive oil not in brine, however if you do get the ones in brine (they are cheaper) rinse under a cold tap before adding to the salad.
