Prawn Mandarin Pasta Salad

Serves: 4 or 8 as a Starter                                                           Time: 25 mins

Ingredients:

  • 500g Fusilli Pasta
  • 280g Cooked and Peeled King Prawns
  • 2 Tins (300g) Mandarin segments in juice
  • 200g Frozen Sweetcorn (326g of tinned sweetcorn)
  • 250ml light Thousand Island Dressing

Method:

1. Cook your pasta in boiling water for 10-12 minutes. (depending on cooking instructions on package)

2. Add your sweetcorn (if frozen) to the water 5 minutes prior to the pasta being cooked.

3. Once the pasta and sweetcorn is cooked, strain off water using a colander and rinse under a cold tap.

4. Stand for 10 minutes to allow the pasta and sweetcorn to cool.

5. Drain mandarins into a glass and enjoy the juice in your own time! (Drain tinned sweetcorn at this point, don’t drink this!)

6. Put the Pasta, sweetcorn, prawns and mandarins into a large bowl.

7. Add the Thousand Island dressing and mix together.

8. Serve and enjoy.

This pasta salad is great as a starter.  As a main course I recommend you make a side salad, such as olive and feta cheese, to go with this.
