Meat Free Spaghetti Bolognese

Serves: 4

Time: 30 mins

  • 250g Meat Free Mince
  • 1 Tin of Red Kidney Beans
  • 1 500g Carton of Passata
  • 1 Tin Ratatouille
  • 1 tbsp Tomato Paste
  • 2 Cloves of Garlic (finely diced)
  • 300g Dried Pasta (allowing 75g per person)

  1. Place a large pan of water on a high heat to boil
  2. Once the water is boiling add the pasta and stir. Follow the pack guidelines for cooking times (if you are using fresh pasta, cook the pasta once the mince has come to the boil and is simmering)
  3. Whilst the pasta is cooking place the meat free mince into a medium sized  pan and cook on a medium heat
  4. Add the ratatouille and red kidney beans to the mince and carry on cooking
  5. Slowly add the passata, tomato paste and garlic, then give the mixture a good stir
  6. Once the mince has come to the boil turn down to a low heat and cook for a further 10 minutes
  7. Serve
